General guidance

Florida humidity and jelly set

Jelly recipes often assume a cooler, drier kitchen. Here, gel tests and cooling behave differently, and jars sit in air that does not help a soft set firm up on the counter.

What this climate changes

High humidity and warm kitchens slow cooling. A gel that would firm overnight in a dry climate may stay soft longer.

Testing set

Use a chilled plate from the fridge, not the room. Watch for a wrinkle that holds.

Holding finished jars

Cool sealed jars out of direct sun. Soft-set jars belong in the fridge for household use.
